Blue corn tortilla chips, especially the Simply Natural kind by Tostitos, are my FAVORITE chip to munch (the rest of the fam’ loves them, too!) I’ve read the label and thought they ranked up there with my stamp-of-approval standards (could be higher in fiber, though – I know… picky!). But who knew that blue corn is so good for us?

Blue corn is actually purple. Deep, dark, almost-black, purple. Anthocyanins (?) are what make blue corn one of the deepest purple colors in nature. Blue Corn scavenges free radicals (nasty, unstable molecules that can damage our healthy cells, causing cancer) with super levels of antioxidants, too. Tests have shown that the levels of antioxidants in blue corn are even higher than those found in blueberries (also purple, at least inside – ever squished them between your fingers, or squashed them on the floor, or handled them frozen? Yep … definitely purple!) Anything that helps to fight those free radicals (not a political group, BTW) is a winner in my book.

Keep the paper towels, maybe even wet-wipes, handy when you and the kids are noshing on blue corn on the cob … picture streaks of purple juice dripping down satisfied faces. Or add cooked blue corn to salads, casseroles and sides to enjoy the healthy benefits without such mess. More ideas soon…
